Warsaw & Łódź · Turnkey Mycology

Fresh mushrooms, grown inside your own building, harvested by your own kitchen.

We convert a container or an unused basement into a climate-controlled growing room, install the racks and sensors, then teach your staff to harvest daily. You run the kitchen. We handle the biology.

What we actually build

A working mushroom farm, sized to fit a spare room.

Most kitchens have somewhere unused: a basement corridor, a disused cold store, a bit of yard for a container. We turn that square footage into a climate-controlled growing chamber with racked substrate blocks, humidity misting, temperature control and airflow tuned for oyster, shiitake or lion's mane mushrooms. You get produce that was still forming a fruiting body that same morning.

Why kitchens work with us

Four reasons this tends to make sense for restaurants and shops

No delivery gap

Mushrooms lose moisture and flavour within days of harvest. A room in your own basement means the gap between picking and plating is measured in hours, not a supply chain.

We keep the biology running

Substrate blocks, humidity curves, contamination checks: that's on us. Your team harvests. We monitor the sensors remotely and show up monthly for the substrate changeover.

Your staff, trained properly

Before we hand over the keys, kitchen staff go through a short training pass covering daily harvest technique, sanitation and what a healthy flush actually looks like.

Predictable, simple pricing

One setup fee covers the build. One monthly subscription covers substrate, maintenance and support afterwards. No separate invoices for every sensor visit or spore bag.

How the setup actually happens

Three stages, from empty room to first harvest

01

Site visit and design

We survey the container or basement, check drainage, power and access, then design a rack layout and climate plan matched to the mushroom species your kitchen wants on the menu.

02

Build and inoculation

Insulation, misting lines, sensors and steel racks go in first. Then we bring in inoculated substrate blocks and calibrate the automation until humidity and temperature hold steady on their own.

03

Training and handover

We walk your kitchen staff through daily harvesting, cleaning routines and what to watch for. From there it's your room, with our monthly substrate visit keeping the cycle going.

Where we operate

Warsaw and Łódź, with room installations tailored per city

Modern restaurant dining room interior in Warsaw with an open kitchen visible

Warsaw

Most of our Warsaw installs are basement conversions in Śródmieście and Mokotów restaurants, plus a handful of hotel back-of-house spaces where a disused cold store gets a second life.

Organic grocery shop interior in Łódź with wooden shelving and produce displays

Łódź

In Łódź we work more often with organic shops and small hotels, usually building a compact container room positioned in a courtyard or loading area next to the storefront.

Curious what this costs and how the subscription works?

The short version: a setup fee sized to your room, then a flat monthly subscription that covers substrate replacement, remote monitoring and support. The full breakdown, along with who it tends to suit, lives on our page for restaurant and shop owners.

We send a short email a few times a year: new build photos, seasonal species notes, nothing more frequent than that.
